Benny’s Not Here

I'm pretty sure I've mentioned before I hate eggs. Yeah, it was in the post, "Scrambled Eggs and the Isley Brothers", so I don't need to go into that again.

Also, if you've been here since the beginning, in the "Another Damn Diet" days, you'll know I have issues with obesity. I'm fat by nature and always will be. That doesn't I can't do something about it, of course. So, at the beginning of every year, I diet. Not in the New Year's Resolution way, but in the "Oh, thank God, the holiday eating and drinking season is over!" kind of way. It's hard to diet during the holidays, so I pretty much just let myself go, from October 31 until January 1. This year, I did so much more than that.

I gave up last year's diet in March after getting negative results and just sort of went with it. I must admit, my Hedonist side was well nurtured and I ate extremely well for the rest of the year. But nothing is without a price and I finished 2024 at 291.1 pounds.

Meh. Shit happens.

This year, I am committed to the diet and so far I'm off to a good start. Today is the last day of the third week and I am down 14.2 pounds. I really think the not drinking helps. Yes, that's right, I'm sober. Not in the 12 step way; more like I'm in between drinks at the moment.

This year's diet, I'm pretty much committed to doing this food blog thing and losing weight, so I'm flat out refusing to give up on the Pleasure of the Table. It's really not as tricky as it sounds. Mostly, I don't eat until dinner time. And I find, cooking actually helps me not eat. Well, not snack out of boredom, which is huge.

I'll never be able to explain the sense of peace cooking for myself and my family brings me. It's not like cooking professionally, there was never peace there, or even cooking at my Lodge. Cooking at my Lodge was about conquering the limitations of the budget while providing a decent meal. Fun, but more stressful than peaceful. I'm a production slut and probably always will be.

So this first recipe I'm posting is a 385 calorie meal which works well for breakfast, lunch or dinner. It's my low calorie approximation of Eggs Benedict and relies on my love of the original and my hatred for scrambled eggs.

It contains low calorie English muffins, ham, eggs, mushrooms, roasted red peppers, Pecorino Romano, cayenne, key lime juice, black pepper and salt. There, I've kept my commitment to telling you what's in the dish without giving anything else away.

It's also worth mentioning, there are no poached eggs and no Hollandaise. They are combined with the best of the two, a savory stirred egg custard that is creamy, satisfying, low calorie and doesn't taste like scrambled eggs.

I'm not bragging when I say it's really solid recipe. My worst enemy could have come up with it and I would have raved about it. Hell, my wife even likes it, which is saying something.
