Week 7 Recap – Getting Back on Track

Well, alrighty then. I’m finally getting back on track. Still fighting my way out of the 260’s but things are moving again. I did a couple things differently this week. Number 1, I walked more, something I needed to do anyhow. Number 2, I did some Keto research because I knew I had to make something my friend, Keto Jesus could eat when he came around. Anyway, as a result of the research, I added some more fat into my diet, and I accept the possibility that it helped. Trouble is, the wife is low-cal, low fat, so I don’t think I can keep that up.

So how much weight did I lose this week? I have no idea because I don’t trust the last weigh in number. If we accept the spreadsheet as a “truth” then I’m down 6.6 pounds, but as I mentioned in the last check in, a lot of that was probably poop weight. Yes, that’s right ladies and gentlemen, I am going on record stating that I am full of shit. There’s a post coming up that should confirm that for you.

I was a delightful week, food wise. My love affair with black market eggs continues. Fresh from the chickens butt, exceedingly poachable, no breakdown of albumin into that watery goo, and overall beautiful. They are a little on the expensive side, though, at $0.50 each, but so worth it. I should do an egg poaching video.

I’ve been exploring low carb tortillas for not taco purposes. I’m toasting them, in my oven, to various levels of darkness, pulverizing them to dust and then using them as a thickener and filler. My Cajun/Creole side screams out for gumbo and etouffee and that means roux, which, normally made of equal parts fat and flour, is not diet friendly. However, I now have a viable substitute.

I have some recipes coming that I hope to have posted by the end of the week. One is a low cal, Keto friendly stuffed bell pepper. It uses turkey Italian sausage, eggplant, sun-dried tomatoes, roasted red peppers and parmesan for flavor without the rice. Honestly very satisfying. Standard pig based Italian sausage also works well, but is obviously higher in calorie.

There is also a roasted vegetable curry coming, too, which just looks awful, but really is quite tasty and satisfying. Also did a really nice open faced ham and egg sandwich that was very satisfying and refreshing. It’s very versatile. You can do it on a tortilla, but it’s too fat to eat like a taco, so when I demo it, I’ll probably do it on low cal bread. Hell, it’s only 215 calories, so I may do it on both.

The worst thing I ate this week was some low carb/high protein ramen. I’ll be doing as written review of that over-priced, steaming bowl of disappointment.

I’m not going to run all the numbers for you this time around. It is sufficient to say, I took in an average of 1414 calories per day, burned an average of 471 calories per day, leaving me with a net caloric intake of 942 calories per day. I start this week at 262.6 pounds and, if all goes according to plan, should break into the 250’s by this time next week. I have one social even that will be risky, but other than that, I should be fine.
