Low Calorie Egg Tostada
Low calorie, satisfying meal for breakfast or dinner.
Ingredients
- 1 ea tortilla, flour, white, Mission "Carb Balance" the 45 calorie ones
- 1 ea tomato, roma
- 4 slices ham, sliced, Land-o-Frost
- 2 each egg, large, whole
- 10 g jam, onion homemade
- 20 g pepper, bell, red, roasted julienne
- 15 g sauce, avocado-cilantro, Herdez Taqueria Street Sauce
- as needed salt, kosher
- as needed pepper, black, ground
- as needed pepper, cayenne, dried, ground
Instructions
Prep
- Toast your tortilla on both sides. Might as well. There's too much crap on this to make a taco out of it.1 ea tortilla, flour, white, Mission "Carb Balance"
- Slice your tomato as thinly as you can.1 ea tomato, roma
- Fry your ham slices to concentrate the flavor. You don't need the moisture, but don't go crazy.4 slices ham, sliced, Land-o-Frost
- Poach or fry your eggs (in minimal fat - this is supposed to be low cal) sunny side up - runny yolk, no snotty albumin. Unless you dig that. The runny yolk really makes this work. It's why I poach.2 each egg, large, whole
Assembly
- Spread your onion jam on your toasted tortilla.10 g jam, onion
- Lay your ham out on the onion jam. Try to cover as much of the tortilla as possible.4 slices ham, sliced, Land-o-Frost
- Lay out your tomato slices. As with the ham, spread them out as much as possible. Sprinkle with salt an pepper to taste.1 ea tomato, roma, as needed salt, kosher, as needed pepper, black, ground
- Add the eggs on top.2 each egg, large, whole
- Garnish with roasted red peppers, cayenne, and the sauce of your choice. I like the Herdez. It tastes good and is only 10 calories per 15 grams.20 g pepper, bell, red, roasted, 15 g sauce, avocado-cilantro, Herdez Taqueria Street Sauce, as needed pepper, cayenne, dried, ground
Notes
It seems stupid to actually enter a recipe into this. It's like sandwich day back in cooking school when we were taught to spread mayonnaise in a smooth, s-shaped motion.
This is very filling and versatile. If you want to cud down on calories, move to one egg, or skip the ham. Whatever you want.
