Fugly Vegetable Curry

While very low calorie and quite tasty, this is just not an attractive dish.

Equipment

  • 1 pan, roasting, large

Ingredients
  

  • 8 ounces peas, frozen
  • 5 ounces cauliflower, fresh Abused into small pieces, though not "riced". We're not savages.
  • 1 ea eggplant Reasonably sized, 1" cubes, skin on.
  • 2 ea zucchini, fresh Cut into 1/2" thick half moon shapes
  • 1 ea tomato, roma Diced, skin and seeds included, but do get rid of the stem scab. That's just gross.
  • 1/2 ea onion, yellow Small dice.
  • 1/2 ea pepper, bell, red, raw Small chop.
  • 15 g spice, Baharat Or garam masala of your choice. This one is a bit sweet, but I like it.
  • 50 g garlic, prepared, chopped
  • as needed fat, spray-on pan lube
  • as needed salt, kosher To taste.

Instructions
 

  • Preheat your oven to 400℉
  • Place your roasting pan on your stove. Should take up two burners. Crank them up to high.
  • Spray a little bit of lube on the pan. Let it heat.

  • Add your onions. Saute to get some color on them, but not until done.
    1/2 ea onion, yellow
  • Lower your heat to about halfway.
  • Add your spice and toss thoroughly to toast a bit while keeping it from burning.
    15 g spice, Baharat
  • Add your tomatoes and cook down a bit to pull of some of the moisture.
    1 ea tomato, roma
  • Toss in your frozen peas and incorporate.
    8 ounces peas, frozen
  • Add your garlic. Incorporate and keep it moving. No one likes scorched garlic.
    50 g garlic, prepared, chopped
  • Add everything else and toss together. You spice should be noticeable as specs all over the eggplant and zucchini.
    5 ounces cauliflower, fresh, 1 ea eggplant, 2 ea zucchini, fresh, 1/2 ea pepper, bell, red, raw
  • Stick it in the oven for 30 minutes.
  • Give it a good stir.
  • Let if go for another 30 minutes.
  • Adjust seasoning.
    as needed salt, kosher
  • Stir and serve immediately.

Notes

You can see from the images this is not a pretty dish, but I swear, it's really not bad for diet food. Always the "for diet food" qualifier. Ugh.
Anyway, if you serve it with one piece of the diet naan, the whole thing makes a decent 193 calorie meal.
You'll probably have leftovers which, honestly make fairly decent, albeit weird taco filling.
