Smokey Mole Poblano Chicken
Smoke-grilled chick thighs, stewed in mole poblano sauce. A great, low calorie taco filling.
Equipment
- 1 Instant Pot You can do this slowly in a pot on the stove, but why?
- 1 masher, potato
Ingredients
- 32 ounces chicken, utility
- 1 jar sauce, Mi Tienda Mole Poblano
- 4 fl oz water
Instructions
- Throw everything in your Instant Pot.
- Set it to Meat/Stew for 30 minutes.
- Neglect it for 30 minutes while the pressure releases naturally.
- Set the Instant Pot to saute and break up the chicken with the potato masher.
- When the chicken is completely broken up and stringy as all get out, mix thoroughly and let it reduce until it looks like it's drying out.
- Pan it out into a storage receptacle. There's no way you're eating 22 tacos at one sitting.
- Let it cool enough to refrigerate and taco at will.

The Mi Tienda Mole Poblano makes this dish. A little sweet, very savory and the smoke from the chicken puts it over the top.
It's extremely versatile, even when not dieting, for tacos, enchiladas, empanadas, tortas, et cetera.
