  • 1 Instant Pot You can do this slowly in a pot on the stove, but why?
  • 1 masher, potato

  • Throw everything in your Instant Pot.
  • Set it to Meat/Stew for 30 minutes.
  • Neglect it for 30 minutes while the pressure releases naturally.
  • Set the Instant Pot to saute and break up the chicken with the potato masher.
  • When the chicken is completely broken up and stringy as all get out, mix thoroughly and let it reduce until it looks like it's drying out.
  • Pan it out into a storage receptacle. There's no way you're eating 22 tacos at one sitting.
  • Let it cool enough to refrigerate and taco at will.
