Smokey Chicken Mole Tacos
Obviously not real tacos, but I take what I can get with being on a diet.
Equipment
- 1 pan, saute, 12 inch nonstick, with lid
Ingredients
- as needed fat, spray-on pan lube
- 1 each tortilla, corn, yellow, 25 calorie, Mission
- 1 oz chicken, shredded, Smokey Mole Poblano Recipe Here.
- 15 g sauce, avocado-cilantro, Herdez Taqueria Street Sauce
- 14 g beans, refried, fat free, Goya Traditional Can you imagine how many spirits of Abuelas past cried out when they called this "traditional"?
- 25 g onion, yellow
- as needed cilantro, chopped
- as needed pepper, cayenne, dried, ground
Instructions
- Heat up your pan on high.
- Spread beans on tortilla. Sprinkle with cayenne, if desired.
- Add your meat.
- Toss it in the pan, tortilla side down.
- Fold over when you smell tortilla cooking.
- Remove to a plate and garnish with onion, cilantro and your favorite sauce.
