May 26, 2024 Sunday Supper

Well, alrighty. That’s the third Sunday Supper down. And we actually ate this one on a Sunday. Only 10 more to go!, which should wrap up by November. There’s a lot of birthdays, holiday and traveling in between now and then, so it is what it is. One of the nice things about doing this on my own is that I get to set the schedule, so wooo! Personal freedom!

So what to write about this time. Well, I got a new camera. Relatively nice one. Still trying to figure out how to use it. Naturally, it doesn’t help that I still haven’t settled on a style for my videos as yet. It’s the different platforms… Facebook, Youtube, Instagram and then the different resolutions and then portrait or landscape. I did a couple tests of landscape 1920 x 1080 (Full HD, though I’m shooting at 4K) and cross posted directly to Facetagram and those seemed to turn out, so I may settle on that.

So let’s talk about the menu. I’ve kinda settled in on 3 dishes and a bread or dessert. I think that works well enough for the future and should keep from spreading myself too thinly.

I paced myself well enough considering the long cook time of the brisket, but I didn’t really pace the Offspring well and he was crashed fairly hard Sunday morning, so most of the footage I shot for the pea salad and the baked potato salad was solo. Dude got up for the pudding, though. Wife operated the camera for the trimming of the brisket for which the Offspring was unavailable for.

One thing I did not count on, and I should have, was my neighborhood being as loud as it is. I tried to plan around my next door neighbor’s party schedule, but I guessed wrong and they did it on Saturday instead of all day Sunday and Monday as they have for other three day weekends. That was annoying as hell. Then there were the leaf blowers everywhere else. Bottom line is, shooting outdoors is never going to be an option as long as we live here. Another check mark in the “move” category. We’ll burn that bridge once we’ve crossed it.

I was very happy with the “StealthFire” Pea Salad. Very cool and refreshing with a very sneaky heat level. The German Style Baked Potato Salad was as expected, as was the Caramel Banana Pudding. The brisket was outstanding. I didn’t get to add the butter to it as I had wanted, but it didn’t matter. It was juicy, it was succulent, it was really very satisfying despite having to finish it off in my oven overnight on Saturday/Sunday. I vacuum sealed and froze everything we didn’t eat and am looking forward to the next time we get to have some.

All in all, our Memorial Day Sunday Supper turned out well. I think I’m shooting the next one on June 9. I hope to have the video issues worked out by then. As far as videos from this weekend go, I’m still editing them and they will appear on YouTube as I get them done.

Another Damn Smoked Brisket

It's not the prettiest brisket, but holy crap it's good. You know, I think about all these external rules about what brisket should and shouldn't be and again, that's just dick measuring. The only rule that matters is "Do you like it?" and I find that I did indeed.
StealthFire Southern Pea Salad

Standard pea salad is a little Pat Boone for me. So this version replaces the bacon with roasted red peppers and the cheese and dressing leaver a nice surprise on the palate.
Caramel Banana Pudding

Variations on this include using boxed pudding mix, making your own vanilla wafers, not caramelizing the bananas, making a crust with ground Nilla wafers and butter like you would for a graham cracker crust. You could even add oysters. I wouldn't but it's your kitchen.
Baked Potato Salad – German Style

This is a super easy dish that isn't our regular, bright yellow potato salad. (Mashed potatoes with crap in it, as my son calls it.) It's room temp German style which means it has a sweet/tangy vinegar based dressing. It's also a fine excuse for bacon.
Another Damn Brisket Rub
